Apple Walnut Cake

2 cups sugar
1/2 cup margarine
2 large eggs
2 teaspoons vanilla extract
2 teaspoons baking soda
1 teaspoon salt
2 cups all-purpose flour
1 teaspoon ground cinnamon
4 cups apples -- sliced thin
1 cup black walnuts -- chopped

Preparation / Directions:

1. Cream margarine and sugar in mixing bowl. Add beaten eggs and vanilla extract and whisk to blend well. 2. Combine baking soda, salt, flour and cinnamon; add to egg mixture and beat until thoroughly mixed. 3. Add peeled and thinly sliced apples along with the chopped walnuts to batter. Blend ONLY enough to spread apples and nuts throughout batter. 4. Grease and flour a 13 x 9 x 2-inch pan. Pour in the batter and bake in a preheated 325-degree oven for 1 hour.
