Apple Pie Cake (Low Fat)

18 1/4 ounces reduced fat yellow cake mix
1 teaspoon baking powder
3 whole egg whites
20 ounces apple pie filling
1 tablespoon olive oil
1 teaspoon cinnamon
1/2 teaspoon lemon extract
1/4 teaspoon nutmeg
1/4 cup reduced fat margarine -- cold
1/2 cup granulated sugar
1/2 cup unbleached flour
1 teaspoon cinnamon

Preparation / Directions:

Preheat oven at 350. Prepare a 13 x 9" pan with cooking spray and flour; set aside. To prepare batter, combine cake mix and baking powder in a small mixing bowl. In another mixing bowl, combine egg whites, apple pie filling, oil, cinnamon, lemon extract, and nutmeg. Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan. Meanwhile, to prepare topping, combine margarine, sugar, flour, and cinnamon in another mixing bowl. Blend with a pantry blender until mixture is crumbly. Sprinkle the crumbs over top of batter. Bake 35 minutes.
