Spanish Omelet

Ingredients:


1 medium Onion -- chopped

2 tablespoons butter or margarine

1 can tomatoes -- (8oz)

1 teaspoon salt

3 large eggs -- well beaten

2 tablespoons hot pepper sauce

1 package crackers

1 cup grated cheese
 

Preparation / Directions:


1. In medium skillet, brown onion in butter; stir in tomatoes, salt, hot sauce and eggs. 2. When mixture is cooked, pour over crackers and sprinkle with grated cheese.
