Creole Tomatoes With Basil, Garlic, And Green Onion Dressin

Ingredients:


2 small Creole tomatoes

1 teaspoon coarsely ground black pepper

1/4 cup basil -- garlic and green-onion dressing
 

Preparation / Directions:


Slice the tomatoes and lay them out attractively in circles on chilled salad plates. Sprinkle with the pepper Spoon a dollop of the dressing on each tomato slice NOTE: Louisiana Creole tomatoes are considered by many to be the finest tomato in the world. Unfortunately, like many other great fresh produce they are just not available here in Alberta. Just choose the best ripe, meaty tomatoes that you can find. INGREDIENTS FOR BASIL, GARLIC, AND GREEN-ONION DRESSING: 1 tsp minced fresh basil 1 clove garlic, minced 2 Tbsp chopped green onion 2 Tbsp nonfat yogurt 1 Tbsp cider vinegar Combine all ingredients, cover tightly, and refrigerate until chilled. NOTES: Dressing can be kept for a week in a tightly covered jar in the refrigerator. This dressing is pungent, so be cautious. VARIATIONS: Add more garlic for the garlic lovers. A teaspoon of Parmesan cheese adds to the Italian flavor of this dressing.
