Quick Cajun Chicken Over Rice

2 medium onion -- peeled, chopped
1 tablespoon olive oil
3 cloves garlic shoots removed and minced
2 whole chicken breasts skinned boned fat removed cut into bite size pieces
1 1/2 teaspoons Cajun seasoning or to taste -- up to 1
2 medium diced ripe tomatoes
3/4 cup dry sherry
8 cups cooked brown rice

Preparation / Directions:

In a heavy saucepan, sauté onions in olive oil until transparent. Add garlic and sauté 5 minutes. Add chicken and Cajun seasoning. Cook over medium high heat until chicken is opaque, stirring constantly. Add tomatoes and sherry and simmer, covered, for 20 minutes. Serve over rice, accompanied by steamed fresh broccoli florets.
