Crawfish Fettuccine

1 medium Onion - large -- chopped fine
1 medium celery stalk - chopped fine
1 medium bell pepper - chopped fine
1/4 pound butter
2 tablespoons flour
1 clove garlic - minced
1 pound crawfish tails - cleaned
1 pound fettuccine noodles
1/2 pound Velveeta cheese

Preparation / Directions:

Sauté the onions, bell pepper and celery in the butter. Add the flour, stirring often, cook for 15 minutes. Add crawfish tails and cook for an additional 20 minutes. Add the cheese and cook for an additional 15 minutes. Add salt and pepper to taste. Cook your noodles until tender. Add the crawfish mixture and bake at 350F for 20 minutes. Garnish as needed.
