Kahlua Surprise Brownies

Ingredients:


3/4 Cup all-purpose flour

3/4 Cup whole wheat flour

1/4 Cup cocoa

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon ground cinnamon

1/4 Cup kahlua (or other coffee flavored liqueur)

2 tablespoons skim milk

2 tablespoons vegetable oil (or 2 Tbsp. applesauce for even lower fat)

2 large egg whites

2 teaspoon vanilla extract

2/3 Cup sugar

1 Cup firmly packed finely shredded zucchini unpeeled
 

Preparation / Directions:


Preheat oven to 350 F. Lightly oil an 8-inch square baking pan. In large bowl, combine both types of flour, cocoa, baking soda, baking powder, and cinnamon. In another bowl, combine kahlua, milk, oil (or applesauce), egg whites, vanilla and sugar. Beat with a fork or wire whisk until blended. Add to dry mixture along with zucchini. Mix until all ingredients are moistened. Spoon into prepared pan. Bake 25 minutes, until toothpick inserted in the center comes out clean. Cool in pan or on wire rack. Cut into squares and serve. Refrigerate leftovers.
