Breakfast Burritos 2

Ingredients:


14 large eggs

5 ounces canned evaporated milk -- (low fat is fine)

1 package smokey links lite -- cut in half lengthwise

14 tortillas flour tortillas (they come in 2 sizes, either works), freeze extras

1 package extra sharp grated cheese -- low fat works fine,
 

Preparation / Directions:


Scramble the eggs using evaporated milk as usual. Set aside. Place tortillas in opened package in microwave for about 10 seconds (this to make them pliable so they roll) Cut 14 square sheets waxed paper from the roll. Place in pile. Put 1 tortilla on top of waxed paper pile and put egg down middle. Put 2 sausage halves down the middle, too. Top with some grated cheese. Roll up and leave the ends open. You don't have to tuck them under. Roll whole thing in waxed paper. If your making lots and lots, and different kinds, use a computer label to label "sausage" "bacon" or whatever. Freeze all in 2 pound ziploc (it's reuseable, though) To serve: Nuke in Microwave for 1 1/2 minutes. Cut in half and let sit just a few seconds to get heat distributed. Notes: I don't like foil -- can't put it in the microwave -- with the waxed paper, you almost don't need a plate! I have daughters -- in each burrito is only about 1 piece of sausage, 1 egg and 1 1/2 T. shredded cheese. That's not much food, so play around with the quantities you need for your family. I have never had the quantities come out perfectly... But I just keep going until I use up all the eggs. If I run out of meat, I substitute or just double or triple the cheese...no biggie. However, these are kind of dull looking after you make your second dozen, so I added some salsa to perk them up a bit -- MUTINY! Just try a few if you decide to ge
