Ingredients:


2/3 cup yellow cornmeal

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon sugar

4 ounces butter plus additional for greasing dish

3 cups milk

3 large eggs
 

Preparation / Directions:


Preheat the oven to 375 degrees. Grease a 2-quart baking dish. Sift the cornmeal, baking powder, salt and sugar together. Set aside. In a heavy 2-to-3-quart saucepan, melt the butter in the milk. Remove from the heat when the butter is completely melted and the milk is heated through. Place the beaten eggs in a medium-size mixing bowl. While whisking, slowly add 3/4 cup of the milk-butter mixture. Then, add the egg-milk mixture to the remaining milk-butter mixture, whisking to combine thoroughly. Add the cornmeal mixture and mix to combine. Place the pot back over medium heat and cook, stirring, until the mixture thickens (about 10 minutes). Pour into the prepared baking dish and bake in the preheated oven until set and lightly browned, 30 to 35 minutes.
