Shali's Mexican Cornbread

Ingredients:


1 pound ground beef

1 teaspoon cumin powder

2 teaspoons chili powder

1 cup cornmeal

1/4 cup flour

1/3 cup cooking oil

3/4 cup eagle brand sweetened condensed milk

1/2 teaspoon baking soda

1 can creamed corn -- (7-oz.)

2 large eggs

1/2 cup chopped onion

3 medium jalapeno peppers -- chopped

1 can jalapeno pinto beans -- (7-oz)

3/4 cup cheddar cheese -- grated
 

Preparation / Directions:


Brown ground beef with chili powder, cumin powder, and half of chopped onions. Mix cornmeal, flour, salt, baking soda, cooking oil, eggs, milk, corn, peppers, cheese, and onions well in a large bowl. Heat large iron skillet in 400-degree onion until hot. Pour 1/2 of cornmeal mixture into skillet. Add meat mixture. Drain beans and pour them over meat mixture. Add the remaining cornmeal mixture. Bake at 400 degrees for 30 minutes. *** This can be made in a 9 X 13 inch pan. Do not preheat it in the oven.
