Santa Fe Navajo Fry Bread

Ingredients:


2 cups flour

2 teaspoons baking powder

1 teaspoon salt

2 tablespoons vegetable shortening

2/3 cup water

1 cup corn oil
 

Preparation / Directions:


Combine dry ingredients cut in lard or shortening until the mixture resembles finely ground crumbs sprinkle with one tablespoon water and toss with a fork repeat just until all flour has been moistened and mixture begins to pull away from sides of bowl form into a ball wrap in plastic and chill for 1-96 hours heat 1-2 inches oil to 400 degrees in a large deep skillet divide dough into equal portions rollout each portion into a 6-inch circle poke your finger into the center of each to make a hole gently place a round of dough into hot oil fry for 1 minute, until golden turn and fry another minute, until golden remove to drain on a cooling rack, blot with paper towels repeat with remaining dough use as desired
