Ingredients:


2 cups cornmeal

1/2 teaspoon salt

1/2 teaspoon baking soda

2 teaspoons baking powder

1 tablespoon sugar -or- honey

1 large egg

1 tablespoon vegetable oil

1 cup buttermilk -or- sour milk (1 cup lowfat milk + 1 tablespoon vinegar)
 

Preparation / Directions:


Combine the cornmeal, salt, baking soda and baking powder in a bowl. Mix well. Pour into a lightly oiled 8-inch-square baking pan. Bake in a 400-degree oven for 20 to 25 minutes.
