Whole Grain Blueberry Waffles

Ingredients:


3/4 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup quick-cooking rolled oats

3 teaspoons baking powder

1 1/2 cups skim milk

1 large egg

2 tablespoons oil

1 cup blueberries -- fresh or frozen
 

Preparation / Directions:


Heat waffle iron. Lightly spoon flour into measuring cup; level off. In large bowl, combine all purpose flour, whole wheat flour, oats and baking powder; mix well. In small bowl, combine milk, egg, and oil; blend well. Add to dry ingredients all at once, stirring just until large lumps disappear. Lightly spray heated waffle iron with nonstick cooking spray. Spoon 1/3 cup batter for each 4-inch waffle into waffle iron, spreading batter to edges. Spoon 2 tablespoons blueberries evenly over batter for each waffle. Bake about 3 minutes or until waffle is golden brown. Repeat with remaining batter.
