Strawberry-Pecan Bread

Ingredients:


2 large eggs

1 cup granulated sugar

1 1/2 cups all-purpose flour

2 teaspoons ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

10 ounces sliced strawberries

1 1/2 cups chopped pecans

1/2 cup oil
 

Preparation / Directions:


Beat eggs, sugar and oil until well combined. Add flour, cinnamon, baking soda and salt. Beat until well blended (batter should be thick). Stir in the partially thawed, undrained berries and the nuts. Pour batter into a greased 9x5x3-inch loaf pan. Bake at 350F for 55-65 minutes. Let cool in pan for 10 minutes. Remove from pan and cool completely on a wire rack. Wrap and store in refrigerator.
