Southern Style Buttermilk Biscuits

Ingredients:


2 Cups white unbleached all-purpose flour

2 1/2 Teaspoons baking powder

1/2 Teaspoon baking soda

1 Teaspoon sugar

1/2 Teaspoon salt

3 Tablespoons shortening

3 Tablespoons unsalted butter

3/4 Cup buttermilk (or Saco Buttermilk Blend - 3 tbsp mixed with flour) - scant

3/4 Cup water as liquid

1 tablespoons milk or melted butter for brushing
 

Preparation / Directions:


Preheat oven to 425 F. Combine flour (and buttermilk blend - if using) baking powder, soda, salt and sugar in a mixing bowl. Cut in shortening and butter until mixture is coarse and grainy. Sprinkle buttermilk over mixture and stir lightly with a fork to blend. Turn out onto a lightly floured board and knead (8-10 times) until mixture is just rollable. Roll out to about 1/2 inch thick and cut into 2 inch discs with a cookie cutter. Brush tops with melted butter or sweet milk and bake on a lightly greased cookies sheet (12-15 minutes) until golden. About 1-1/2 dozen
