Pumpkin Bread

Ingredients:

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon -- ground
1/4 teaspoon baking soda
1/4 teaspoon nutmeg -- ground
1/4 teaspoon cloves -- ground
1/2 cup egg whites
1 cup brown sugar -- packed
1 cup pumpkin -- canned
1/2 cup skim milk
1/3 cup applesauce
1/2 cup raisins -- optional
1/2 cup chopped walnuts
 

Preparation / Directions:

(Makes 1 Loaf) Preheat oven to 350 degrees. Spray loaf pan with cooking spray. In a large mixer bowl combine flour, baking powder, cinnamon, baking soda, nutmeg, and cloves. In another mixing bowl, whisk egg white till frothy, then add brown sugar, pumpkin, milk, and applesauce. Beat well for about 2 minutes. Add flour mixture and blend well. If using nuts and/or raisins, stir them in at this time. Pour batter into pan, and bake about 1 hour or until a toothpick inserted in the middle comes out clean. Let set for 10 minutes in pan, then remove from the pan, and cool on a wire rack.
