2 large eggs
2 cups cooked rice
1 cup milk
1 cup corn meal
1 tablespoon melted butter
1/2 teaspoon salt

Preparation / Directions:

Makes 1 round Beat the eggs lightly. Mix in the rice, milk, corn meal, butter, and salt. Beat thoroughly and pour into a round buttered shallow mold about 10 inches in diameter - a pie pan is fine. Bake in a preheated 375 F oven for about 35 minutes or until lightly browned. Serve warm from its pan.
