Pecan Bread

Ingredients:

1 large Egg
1 Teaspoon Ornage Juice
3/4 Cup Sugar
3 Tablespoons Butter Or Margarine -- Melted
3 Cups All-Pupose Flour
2 1/2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soa
1/2 Teaspoon Salt
1 1/2 Teaspoons Grated Orange Peel
1 1/2 Cups Buttermilk
1 1/2 Cups Chopped Pecans
 

Preparation / Directions:

Place egg, orange juice, sugar, and butter in bowl. Attach bowl and wire whip. Turn to speed 4 and whip 30 seconds. Stop and scrape bowl. Combine flour, baking powder, soda, salt, and orange peel. Turn to speed 2 and add flour mixture, mixing about 15 seconds. Stop and scrape bowl. Add buttermilk. Turn to speed 4 and whip 20 seconds. Reduce to stir speed and quickly add pecans, mixing just until combined. Spread batter in a greased and floured 9x5x3-inch loaf pan. Bake at 350 F for 55 to 60 minutes. Remove from pan and cool on wire rack.
