Mctyre's Cornbread

Ingredients:


1 1/2 cups self-rising cornmeal

3 large eggs -- beaten

1 cup cream-style corn

1/2 cup vegetable oil

1 cup buttermilk

1 large jalapeno pepper -- seeded, deveined and chopped

1 teaspoon salt

1 cup monterey jack or cheddar cheese -- shredded
 

Preparation / Directions:


Preheat oven to 375~F. Mix all ingredients, except cheese, in mixing bowl. Stir just until ingredients are moistened. Pour half batter into an 8-or-9" square, greased and floured baking pan. Sprinkle cheese on top. Pour remaining batter on top. Bake 45 minutes, or until golden brown.
