Maraschino Cherry Loaf

1 3/4 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
12 ounces maraschino cherries -- red (1 bottle)
2 teaspoons lemon rind -- grated
2 large eggs -- beaten
1 cup milk
3 tablespoons vegetable oil -- or melted shortening

Preparation / Directions:

Preheat oven to 375øF. Sift all dry ingredients together into large bowl. Drain and dry cherries. Cut into small pieces. Toss with dry ingredients. Mix the rest of the ingredients together and mix into the dry ingredients. Pour into greased 9" x 5" bread pan. Bake in preheated 375øF. oven for about 45 minutes to 1 hour, or until lightly browned and when you use a cake tester in the center of the loaf and it comes out clean.
