Glorious Banana Bread

Ingredients:

1/3 cup packed brown sugar
1/3 cup granulated sugar
1/4 cup Sunsweet Lighter Bake
2 large eggs
1 1/2 cups mashed ripe banana
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts -- optional
 

Preparation / Directions:

Coat 9 x 5 inch loaf pan with cooking spray; set aside. Beat together sugars, Lighter Bake, eggs and banana. Combine flour, baking powder, soda and salt; stir into batter until just moistened. Stir in walnuts. Spoon batter into prepared pan. Bake in preheated 350 degree oven for 55 to 60 minutes or until pick inserted into center comes out clean. Cool 10 minutes. Remove from pan and cool completely on rack. Bread can be wrapped in foil and frozen for up to 1 month. Makes 1 loaf (16 servings).
