Date Nut Bran Bread

Ingredients:

1 1/2 cups boiling water
1 1/2 cups chopped dates
1 cup fiber one cereal -- crushed
1/2 cup packed brown sugar
1 tablespoon margarine or butter -- softened
1 large egg
1 1/2 cups gold medal all purpose flour
1 cup coarsely chopped nuts
1 1/2 teaspoons baking soda
1/2 teaspoon salt
 

Preparation / Directions:

Heat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan. Pour the boiling water over dates and cereal in heatproof bowl; let stand until warm. In large bowl mix brown sugar, margarine and egg; stir in date mixture. Stir in remaining ingredients until well blended. Spread in pan. Bake 60 to 70 minutes or until a cake tester inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely before slicing. Serve. Makes 1 loaf
