Doreen's Date A Nut Bread

Ingredients:


2 Cups all purpose flour

1 Tablespoon baking powder

1/4 Teaspoon salt

1 Teaspoon ground cinnamon

1/4 Teaspoon ground allspice

1 cup pitted dates -- chopped

1 cup chopped pecans

1/2 Cup unsalted butter -- softened

1 cup sugar

2 large eggs

1/4 Teaspoon almond extract

2/3 Cup lowfat milk
 

Preparation / Directions:


Preheat oven to 350°F. Sift first 5 ingredients together in a bowl. Combine 1/4 cup flour mixture with chopped dates and nuts in another bowl. Combine butter and sugar in a mixing bowl and beat with an electric mixer until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Add almond extract and beat another 2-3 minutes. Add dry ingredients alternately with milk, beating after each addition. Fold in date and nut mixture by hand. Spoon into 4 well-greased mini-loaf bread pans (6x3 inch) and bake 25-30 minutes until a tester comes out clean when inserted in center.
