Cranberry Irish Soda Bread 2

Ingredients:


3 1/2 cups all-purpose flour

1/4 cup sugar

2 tablespoons caraway seeds

1 tablespoon baking powder

1 teaspoon salt

1 cup dried cranberries or cherries

2 cups regular or low-fat buttermilk

1 large egg

1 teaspoon baking soda
 

Preparation / Directions:


Preheat oven 375 degrees. Spray a 9 x 5 x 3 inch loaf pan. In a large bowl, stir together flour, sugar, caraway seeds, baking powder and salt. Stir in cranberries or cherries. In a 2 cup measure or bowl, whisk together buttermilk, egg and soda. Add buttermilk mixture to flour mixture. Stir until thoroughly incorporated. Pour into prepared pan. Cut an X into the top. Bake for 55 to 65 minutes or until top is golden brown and a skewer inserted in the center comes out clean. Invert, turn right side up and cool on a rack. Serve warm or at room temperature. Cook Time: About 55 minutes Makes: 1 loaf Prep Notes: Cooled bread may be stored in a plastic bag up to 2 days or frozen.
