Cranberry - Orange Teabread

1 cup sugar
2 cups flour
1 1/2 teaspoons double acting baking: powder
1 tablespoon grated orange rind
1 cup fresh cranberries
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup softened butter or margarine
3/4 cup orange juice
1 large egg -- beaten
1/2 cup chopped nuts

Preparation / Directions:

Toss sugar, flour, baking powder, soda, salt and mix. Cut in butter with pastry blender to make a very fine crumb mixture. ICombine orange juice and egg; add all at once and stir to moisten.Fold in orange rind, nuts, if desired, and cranberries. Avoid over-mixing. Spread into greased 9 x 5 inch loaf pan (flatten center slightly). Bake in moderate oven (350F) about 1 hour until loaf is browned and skewer inserted Into center comes out dry. Cool thoroughly on rack before slicing. Can be frozen. Wilma Oldaker
