Cornmeal Loaf

Ingredients:


3 cups boiling water

1 cup cold water

1 cup cornmeal

1/4 cup flour

1 teaspoon salt

1/2 cup dry milk

1 medium Onion -- finely chopped
 

Preparation / Directions:


Boil 3 cups of water in double boiler top. Mix cornmeal with all other ingredients in cold water and add slowly, stirring constantly as it thickens. Put top of double boiler over bottom part and cook over hot water for 30 minutes more, covered. Pour into a loaf pan and cool. When firm, slice and fry in a greased pan.
