Cliff House Zucchini Bread

Ingredients:

3 large eggs
2 cups Sugar
2 teaspoons Vanilla
1 cup Oil
3 cups Zucchini -- peel, grate, drain
3 cups Flour
1 teaspoon Baking powder
1 teaspoon Baking soda
1/2 teaspoon Salt
1/2 cup Raisins -- opt
1 cup Pecans
1 cup Crushed pineapple -- drained
 

Preparation / Directions:

Beat together eggs, sugar, vanilla and oil in large bowl. Stir in zucchini. In separate bowl, combine flour, baking powder, baking soda, salt, raisins and pecans. Add to zucchini mixture. Add pineapple and mix well. Pour into greased and floured 9x5 loaf pan. Bake at 350~ 55 to 60 minutes or until wood pick inserted in center comes out clean. 8 servings.
