Preparation / Directions:
Makes one 9 x 5-inch loaf
1. Combine flour, cocoa, sugar, baking powder, baking soda and salt in large mixing bowl; cut in shortening with pastry blender or two knives until mixture resembles coarse crumbs.
2. Add bananas and eggs; stir with fork just until blended.
3. Spread evenly in greased, floured 9 x 5 x 2 3/4-inch loaf pan; bake in preheated 350 F. oven 50 to 55 minutes, or until cake tester inserted in center comes out clean.
4. Cool in pan 10 minutes.
5. Remove from pan; cool completely. Sprinkle with confectioners' sugar.
