Chocolate Banana Bread With Variation

1 1/2 cups all-purpose flour
1/2 cup cocoa
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 cup mashed ripe bananas -- (about 2 medium)
2 large eggs -- slightly beaten
1 tablespoons confectioners sugar

Preparation / Directions:

Makes one 9 x 5-inch loaf 1. Combine flour, cocoa, sugar, baking powder, baking soda and salt in large mixing bowl; cut in shortening with pastry blender or two knives until mixture resembles coarse crumbs. 2. Add bananas and eggs; stir with fork just until blended. 3. Spread evenly in greased, floured 9 x 5 x 2 3/4-inch loaf pan; bake in preheated 350 F. oven 50 to 55 minutes, or until cake tester inserted in center comes out clean. 4. Cool in pan 10 minutes. 5.
