Chili Cheese Cornbread

6 tablespoons unsalted butter
1 can corn
1/2 cup sour cream
2 large eggs
1 cup yellow cornmeal
1 teaspoon salt
1 tablespoon baking powder
1/2 cup monterey jack cheese
2 medium scallions
1/2 teaspoon red pepper flakes

Preparation / Directions:

Preheat oven to 375. Beat together melted butter, corn, sour cream and eggs together in mixing bowl. Mix together cornmeal, salt and baking powder. Stir dry ingredients into egg mixture. Blend well. Stir in cheese, scallions and red pepper flakes. Pour into a buttered baking pan and bake for 20 minutes until golden brown. Approximately 20-24 minutes.
