Cajun Gingerbread

1/2 Cup Sugar
1/2 Cup Butter Or Margarine -- Softened
1 large Egg
1/2 Cup Molasses
1 1/2 Cups All-Purpose Flour
3/4 Teaspoon Baking Soda
1/2 Teaspoon Cinnamon
1 Teaspoon Ginger
3/4 Teaspoon Salt
1/4 Teaspoon Cloves
1/2 Cup Boiling Water

Preparation / Directions:

Place sugar and butter in bowl. Attach bowl and flat beater. Turn to speed 6 and beat 15 seconds. Stop and scrape bowl. Add egg and molasses. Turn to speed 4 and beat 30 seconds, until well combined. Combine flour, soda, cinnamon, ground ginger, salt, and cloves. Turn to speed 2 and add 1/3 of the flour mixture alternately with 1/2 of the water, beating 10 seconds after each addition. Repeat until all ingredients are used. Stop and scrape bowl. Turn to speed 4 and beat 10 seconds. Pour batter into greased 8x8x2-inch pan. Bake at 350 F for 35 to 40 minutes. Serve warm.
