Bosch Bread Recipe

Ingredients:

1 cup scalded milk
3 cups hot water
2 large egg
2/3 cup sugar
1/2 cup very warm water
2 tablespoons yeast
1 teaspoon sugar
1 cup oil
1 tablespoon salt
12 cups flour
 

Preparation / Directions:

In small bowl place 1/2 cup very warm water. Sprinkle in 2T yeast plus 1 teaspoon sugar. Stir slowly for about 15 seconds and let set to activate. Scald milk on stove in small pan. In Bosch, place eggs and beat lightly. Add 2/3 cup sugar, oil, salt, hot water and scalded milk. Mix for about ten seconds. Add yeast mixture and mix for another ten seconds. Add 5 cups flour one at a time on low speed. Add 4 cups flour one at a time on medium speed. Add remaining 3 cups flour one at a time one high speed. Continue mixing on high for five minutes. (Watch Bosch to ensure it doesn't "walk" off of counter). Pour out onto counter. Dough will be slightly sticky. If you feel it is too sticky, sprinkle dough with about 1/4-1/2 cup flour. Kneed dough for approximately 3-4 minutes or until added flour is well blended. Place dough in bottom of large bowl sprayed with non-stick spray, cover with towel, and let rise until at least doubled (approximately 1 1/2 hours). Punch down and kneed for about 3 minutes. Divide into three equal loaves and place in sprayed bread pans. Cover with towel and let rise - about 1 1/2 hours. Bake at 350 for 30 minutes. To make rolls instead of bread, instead of dividing into three loaves, break into chunks and roll into balls about the size of large golf balls. Should make about 36 rolls. Place into sprayed 9x13 pans with a little space in between each roll to allow for rising. Each pan fits about 12 rolls. Cover with towels and allow to rise. Bake at 350 for about 20 minutes or until golden brown. As soon as you remove bread pans or rolls from oven, have a cube of butter partially unwrapped and ready to use. Do not remove bread from pans - GENEROUSLY rub butter over tops and sides of bread or rolls. Allow bread to cool for approximately 30 minutes in pans. Remove from pans and cool on rack.
