Apple Nut Bread

2 cups sugar
1 cup salad oil
4 large eggs -- beaten
1/4 cup commercial sour cream
4 cups all purpose flour
2 cups apples -- peeled and chopped
2 teaspoons baking soda
1 cup pecans -- chopped
1 teaspoon salt
1 teaspoon vanilla

Preparation / Directions:

Gradually add sugar to eggs; beat until light and fluffy. Combine dry ingredients; add to sugar mixture alternately with oil and sour cream, beating well after each addition. Stir in apples, pecans and vanilla. Spoon batter into 2 greased and floured 9x5x3 inch loaf pans. Bake at 350~ for 1 hour or until toothpick inserted in center comes out clean. Let cool in pans 5 minutes; turn out on wire racks to finish cooling.
