Apple Loaf

Ingredients:

1/4 cup shortening
1 teaspoon soda
2/3 cup sugar
1 teaspoon salt
2 large eggs
2 cups raw apples -- grated
2 cups all purpose flour
1/2 cup nuts -- chopped
1 teaspoon baking powder
 

Preparation / Directions:

Beat shortening, sugar and eggs together until light and fluffy. Sift dry ingredients together; add alternately with grated apples. Add nuts. The batter will be stiff. Turn into greased and floured loaf pan. Bake at 350~ for about 1 hour.
