Apple Coffee Loaf

Ingredients:


1/2 cup brown sugar

1/2 cup rolled oats

2 teaspoon cinnamon

1/4 cup Plugrá (unsalted butter)

3/4 cup Plugrá (unsalted butter)

1 1/3 cup sugar

3 large eggs

1 teaspoon vanilla

3 cups flour

1 1/2 teaspoon baking powder

1 1/2 teaspoon baking soda

1/2 teaspoon nutmeg

1 1/2 cups plain yogurt

1 medium apple -- chopped
 

Preparation / Directions:


In food processor, combine brown sugar, oats, cinnamon, and 1/4 cup Plugrá. Process until mixture looks like coarse meal. Set aside. In large bowl, cream 3/4 cup Plugrá with sugar. Add eggs one at a time; stir in vanilla. Sift together flour, baking powder, baking soda, and nutmeg. Add to creamed mixture alternately with plain yogurt, beginning and ending with dry ingredients. Pour 1 1/2 cups batter into each of 2 buttered 9x5-inch loaf pans. Top each with 1/3 cup streusel mixture and 1/4 of apple. Divide remaining batter, streusel and apple between pans. Cut with a knife to marble the ingredients. Bake at 350°F for 55 minutes or until pick inserted in center comes out clean. Serve warm. Recipe freezes well.
