Apple And Blue Cheese Bisque

1 teaspoon unsalted butter
2 cups apple
1 cup half and half
6 ounces blue cheese
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper

Preparation / Directions:

heat the butter in a saucepan, over a medium flame add the apples and saute for 1-2 minutes, until softened add the half and half or milk and reduce heat to low heat and stir until the mixture begins to scald around the edges gradually add the cheese and stir until melted season to taste with salt and pepper serve hot
