Sweet Potato-Pecan Biscuits

Ingredients:


2 cups flour

4 teaspoons baking powder

2 tablespoons sugar

1/4 teaspoon cinnamon

1/2 teaspoon salt

2/3 cup vegetable shortening

1 1/2 cups sweet potatoes -- cooked and mashed

1/2 cup pecans -- chopped

1/4 cup milk

2 cups flour

4 teaspoons baking powder

1/4 teaspoon cinnamon

1/2 teaspoon salt

2/3 cup vegetable shortening

1 1/2 cups sweet potatoes -- cooked and mashed

1/2 cup pecans -- chopped

1/4 cup milk
 

Preparation / Directions:


1. Combine the flour, baking powder, sugar, cinnamon, and salt in a large mixing bowl. Using two knives or a pastry blecnder, cut the shortening into the dry ingredients until resembles coarse meal. 2. Using a heavy spoon, stir in potatoes and pecans until are just blended. Pour the milk over the mixture and stir until it is just blended in. Do not overmix. 3. 425 oven. Lightly grease 2 sheets. Turn dough out onto a well-floured surface and pat into a rough rectangle about 1/2" thick. Cut into circles with a 1 1/2" biscuit cutter and place them on the baking sheets. 4. Bake for 10 to 12 minutes, or until tops are golden brown.
