Ingredients:


2 cups mashed sweet potatoes

2 cups all-purpose flour

1 tablespoons unsalted butter

1 tablespoons sugar

1 teaspoon salt

1/4 teaspoon baking soda

1/2 cup buttermilk

Preparation / Directions:


Preheat the oven to 400F degrees. Grease 2 baking sheets. Mix together thoroughly the sweet potatoes, flour, butter, sugar, salt and baking soda. Mix in enough buttermilk to form a soft dough (it will be sticky). Coat hands with flour and lightly toss dough back and forth a few times to cover with flour . Do not overwork the dough. Roll out on a well-floured board to a thickness of 1/2 inch. Cut with a floured 1/2-inch biscuit cutter and bake for about 15 minutes, or until tops begin to slightly brown. Makes approximately 24.
