Old Fashioned Maine Biscuits

Ingredients:


4 cups flour

4 teaspoons cream of tarter

2 teaspoons baking soda

1/4 teaspoon salt

1/2 cup vegetable shortening or lard

1 1/2 cups cold milk

Preparation / Directions:


Mix ans sift together dry ingredients. Add shortening and cut in with pastry blender or two knives until all uniform. Add the milk all at once and stir just until mixed. You should have a nice soft dough. You may have to add a bit more milk. Quickly turn out onto a floured surface and pat to 1/2 to 3/4 inch thickness. Cut and place on a greased pan and bake in a PREHEATED oven at 475 for 5 minutes. Turn the oven off DO NOT open the door and let finish baking for 5 to 10 minutes until golden brown. Once you have added the liquid the quicker you get them into a hot oven the higher and lighter they will be. "When did my wild oats turn into shredded wheat"
