Ingredients:


1 pound sweet butter

16 ounces sugar

1 teaspoon vanilla

2 cups flour

1 tablespoons baking soda

4 whole eggs

1 cup dried blueberries or dried cranberries OR dried cherries

1 cup hazel nuts or pistachios OR almonds -- etc

Preparation / Directions:


In a mixer combine butter, sugar, vanilla. Cream together until light and fluffy. In a separate bowl, combine flour and soda. Mix and set aside. Add eggs to sugar mixture. Mix until smooth. Add berries and nuts. Mix in flour 1/4 at a time until it becomes the texture of cookie dough. If you need to add a bit more flour, go ahead. When the dough is soft but not stickly to the touch then separate the dough into 2 loaves, flat and long. Bake at 325 degrees until golden brown (about 20 minutes), then cool. When cook, cut into 1" sticks the shape of biscottis and lay them onto a sheet pan and set them in a 100 degree oven overnight so in the morning you have fresh biscotti. Tip: Cook the first time on wax or parchment paper. You can add anything to the dough: white chocolate chips, dried papaya, mongo, dried apple, dried apriots, fennel seed, any nut or spice or dried fruit. Go nuts!! Geoff
