Stuffed Pepper Cups

Ingredients:


6 Medium green peppers

1 Pound ground beef

1/3 Cup onion chopped

1/2 Teaspoon salt

1 Dash pepper

16 ounces tomatoes

1/2 Cup water

1/2 Cup long-grain rice uncooked

1 teaspoon worcestershire sauce

4 ounces sharp cheddar cheese shredded
 

Preparation / Directions:


Cut off tops of pepper and remove seeds and membrane. Precook green pepper cups in boiling salted water about 5 minutes; drain. (For crisp peppers, omit precooking.) Sprinkle inside of cups generously with salt.

Cook ground beef and onion till meat is lightly browned. Seasonn with salt and pepper. Add tomatoes, water, rice and Worcestershire sauce. Cover and simmer till rice is tender, about 15 minutes. Stir in cheese. Stuff peppers; stand upright in 10x6x11/2-inch baking dish. Bake uncovered at 350° for 20 to 25 minutes.
