Williams-Sonoma Fajitas

Ingredients:


12 pound sirloin steak, trimmed -- cut into strips

12 pound skinless boneless chicken breasts -- cut into strips

12 pound shrimp -- optional

12 cup safflower oil

5 teaspoons fresh lime juice

3 tablespoons fajita seasoning -- *see note

1 teaspoon salt

1 medium red bell pepper -- sliced

1 medium green bell pepper -- sliced

1 small red onion -- sliced

3 medium green onions -- sliced

12 cup fresh cilantro

14 cup cheddar cheese -- crumbled

1 package corn tortillas -- warmed
 

Preparation / Directions:


Peel and devein shrimp if using. Mix oil, lime juice, fajita seasoning, and meat, and marinate for 4 hours. Drain meat and reserve marinade. In a heavy fry pan, heat on high 3 tbs marinade. Add peppers and onions, saute for 2 minutes. Remove to platter. Add 1 tbs of marinade to pan. Add meat, stirring for 3 minutes or until cooked. Remove meat to platter. Pour remaining marinade into pan, cook for 1 minute. Pour over meat and peppers. Add cilantro and toss. Serve with cheese in tortillas.
