Texas Style Beef Brisket

Ingredients:


3 pounds beef brisket

1 cup catsup

1/2 cup vinegar

1/4 cup worcestershire sauce

1/4 cup unsalted butter

1 cup celery

1 cup sweet onion

2 tablespoons garlic

1 teaspoon paprika

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 pound hickory chips
 

Preparation / Directions:


Place brisket, fat side up, onto a rack in a disposable pan place onto grill cover and roast for 60 minutes meanwhile, combine remaining ingredients (except chips) in a saucepan, over a medium flame heat and stir for 10 minutes turn and baste meat with sauce mixture continue roasting, turning, and basting meat for another 3-4 hours, until very tender sprinkle chips over coals cover and smoke meat for 15 minutes uncover and brush with sauce place onto a heated serving platter slice thinly across the grain serve hot, with remaining sauce to the side
