Strips Of Beef With Corn And Zucchini

Ingredients:


1 1/4 pounds round steak 3/4 inch thick

2 tablespoons soy sauce

1 clove garlic minced

1 teaspoon pepper

1 tablespoon olive oil

1 tablespoon butter

15 ounces tomato sauce

2 large zucchini cut in quarters lengthwise

4 medium ears sweet corn -- husked and cut into thirds

1 teaspoon sugar

1 teaspoon salt

1 teaspoon minced parsley
 

Preparation / Directions:


Trim excess fat from steak. Cut in 1/8-inch crosswise strips and toss with soy sauce, garlic and 1/4 teaspoon pepper. Brown meat quickly in hot oil and butter in large skillet, remove and set aside, mix tomato sauce with pan drippings and bring to a boil. Add zucchini, cover and simmer 5 minutes. Push zucchini to one side of skillet, add corn and sprinkle with sugar. Bring to a boil, cover then simmer 3-4 minutes, or until vegetables are tender. Make room in center of skillet and add meat just to heat. Season vegetables with salt and pepper to taste and sprinkle with parslely.
