Shepard's Pie

1 pound lean ground beef
2 cans cream of chicken soup -- condensed
20 ounces peas and carrots -- frozen
10 ounces corn -- frozen
6 medium potatoes
2 tablespoons margarine
1/4 cup milk -- 2% lowfat
1/4 teaspoon salt
1 cup cheddar cheese -- shredded (optional)

Preparation / Directions:

Mix ground beef, soup and veggies in bowl. Pour into casserole dish(es). Boil potatoes, mash with margarine, salt and milk; Use to top beef mixture. Top with cheese if desired (I usually skip this). Bake at 350 for 25 minutes or until bubbly. Can be frozen with just the filling in a ziplock bag or fully assembled in a casserole dish.
