No-Loaf Meatloaf

1 1/2 pounds lean ground beef
1/2 cup tomato ketchup
1/3 cup tomato juice
1 teaspoon salt and pepper to taste
1 teaspoon hot sauce to taste
1 teaspoon worcestershire sauce to taste
2 large eggs beaten
3/4 cup fresh bread crumbs
1/4 cup finely chopped onions
1/4 cup chopped red bell pepper
2 teaspoons prepared mustard
1/4 cup tomato ketchup
1/2 teaspoon prepared mustard
2 teaspoons brown sugar

Preparation / Directions:

In a large bowl, combine ketchup, tomato juice, salt, black pepper, hot sauce Worcestershire sauce, eggs, bread crumbs, onions, red bell pepper and mustard. Mix well. Add ground beef. Mix thoroughly. On microsafe baking dish, form meat mixture into a 9-inch ring. Cover with waxed paper microwave with high heat until juices gather on top. Pour off juices. Microwave, covered at medium heat (about 10 minutes). In a separate bowl, combine the ketchup, prepared mustard and brown sugar remove waxed paper. Spread top of meat loaf with the topping mixture. Microwave, uncovered on high until done with toothpick. Approximately 20 minutes.
