Meat Loaf With Dressing A La Carol Shields

Ingredients:


2 pounds hamburger

1 small onion -- diced

1 teaspoon salt

1 teaspoon pepper

1 large egg

1 teaspoon poultry seasoning -- to taste

1 teaspoon sage

15 slices bread

1/2 medium Onion -- diced

1/4 cup celery -- diced

1 teaspoon salt -- to taste

1 teaspoon pepper -- to taste

2 pieces bouillon cubes -- (beef flavored)

2 cups hot water
 

Preparation / Directions:


Put chopped celery into a small sauce pan and boil with salt until tender. Drain. Mix hamburger, egg, onion, salt and pepper. Divide in half. Put half in bottom of bread pan.. Take boiling water and add bouillon cubes. Let dissolve and stir well. Put torn bread in a large bowl. Add chopped onions, chopped celery, salt , pepper, poultry seasoning, and sage. Pour beef broth over the bread mixture. Mix together. If too soggy, add more bread. If too dry add more hot water. Put stuffing in pan on top of meat. Put the other half of meat on top of the stuffing. Cover the bread pan with aluminum foil. Put in a few slits on top the let off steam. Bake in a 350 degree oven for about an hour. Notes: This freezes well. We usually have enough for three meals out of it.
