Kam's Crockpot Enchiladas

Ingredients:


1 pound ground beef -- browned and drained

1 can green chiles

1 can sliced olives

1 teaspoon minced garlic

1 package taco seasoning mix -- to taste

1/2 cup chopped onions

1/2 can tomato soup

1 can chopped tomatoes -- with juice

1 1/2 cups shredded cheddar cheese

9 tortillas corn tortillas
 

Preparation / Directions:


Brown ground beef and onions; drain fat. Add taco seasoning to meat and onions. Transfer to small bowl. In same skillet, mix tomatoes, tomato soup, chiles, garlic and olives; heat until just boiling, stirring occasionally. In Crockpot, place 3 tortillas, 1/2 meat mixture, 1/2 tomato mixture, and 1/3 of the cheese. Repeat layers, topping with 3 tortillas and last 1/3 of cheese mix. (You can increase ingredients and make three layers if you desire.) Cook on High 4-5 hours. Serve with fat-free sour cream and salsa, if desired. NOTE - I made these up last night with ingredients I had on hand, and my husband even asked for seconds! He's the picky eater here, so either he was just humouring me, or he actually liked them! I can really eat anything, so my saying I liked them doesn't vouch for much. : ) Obviously, these are easy to alter to your own tastes, so go for it! - -Kam
