Football Salami Kick-Off

Ingredients:

1 large loaf Italian bread
1 bottle Deli Mustard
1 tablespoon vegetable oil
2/3 cup chopped onion
1/3 cup chopped seeded red bell pepper
1/3 cup chopped seeded green bell pepper
12 ounces beef salami -- diced
8 large eggs -- beaten
1 teaspoon salt
1 teaspoon freshly ground black pepper
 

Preparation / Directions:

Preheat oven to 350 F. Slice bread in half lengthwise. Remove soft bread center; reserve for another use. Spread mustard evenly inside bread shells. Heat oil in large non-stick skillet over medium heat. Add onion; cook 4 minutes. Add bell peppers; cook 4 minutes or until peppers are tender, stirring occasionally. Add salami; cook until heated through. Add eggs; increase heat to medium-high. Cook, stirring until eggs are set. Season with salt and pepper to taste. Fill bread shells with salami mixture. Close sandwich; wrap tightly in aluminum foil. Bake 20 minutes or until heated through. Cut sandwich crosswise into 6 slices.
