Ingredients:

1 pound lean ground beef
1/2 cup celery -- finely chopped
1/2 cup onion -- finely chopped
1/4 cup green pepper -- finely chopped
1 teaspoon salt
1 teaspoon chili powder
3/4 teaspoon pepper
2 cups tomatoes -- fresh or canned
1/2 cup rice -- cooked
 

Preparation / Directions:

1. Combine ground beef, celery, onion, and green pepper in nonstick skillet; cook until meat is browned. 2. Drain accumulated fat. 3. Add salt, chili powder, pepper, tomatoes, and rice. 4. Cover and simmer over low heat for 45 minutes, adding water occasionally to keep meat from sticking to skillet.
