Beef and Broccoli

3/4 pound top round steak -- cut 3/4 inch thick
1 clove garlic
10 3/4 ounce cream of broccoli soup
2 tablespoons peanut oil
1/4 cup water
2 cups broccoli flowerets
1 tablespoon soy sauce
1 medium onion -- cut into wedges

Preparation / Directions:

Slice the beef into thin strips across the grain. Brown the beef in half of the oil in a large, heavy skillet, stirring often. Remove the meat from the skillet. Add the remaining oil to the skillet. Saute the broccoli flowerets and the onion with the garlic, stirring often, until tender-crisp. Add the soup, water and soy sauce. Heat to boiling. Return the beef to the skillet. Heat through, stirring occasionally. Serve over rice.
